We usually add chicken and tomatoes to the mix-- sun-dried, roasted cherry tomatoes, or both :) Or sometimes we add a bunch of roasted veggies (zucchini, yellow squash) and just a little pesto. A spritz of lemon and a lots of fresh cracked pepper also are great. Your hubby's mushroom risotto sounds fantastic, and it's a classic preparation I believe. The weather suck, some sad things happened to friends, and worried about my dad mid-month when the incision from his ankle surgery got infected and landed him in the hospital for a couple of days (he recovered and is doing well now but it was tough seeing him so sick)... I think the highlight was probably my 10 mile race and the quiet nights in that I spent with Phil!
